For the Mocktail:
- 2 cups fresh watermelon cubes
- 12 mint leaves plus more for garnish
- 1/4 cup fresh lime juice
- Lime sparkling water
For the Honey Simple Syrup:
- 1/4 cup honey
- 1/4 cup water
Instructions
- Prepare the Honey Simple Syrup: In a small saucepan, combine honey and water. Simmer until slightly thickened, then cool and store in the fridge.
- Blend the Ingredients: In a blender, combine watermelon, mint leaves, and lime juice. Strain the mixture through a sieve.
- Combine Ingredients: Mix the honey simple syrup with the watermelon mixture.
- Serve: Pour the mixture over ice in glasses. Top with lime sparkling water, mint leaves, and watermelon cubes.
Notes
- You can adjust the sweetness by adding more or less honey syrup.
