Instructions

  1. Prepare the Honey Simple Syrup: In a small saucepan, combine honey and water. Simmer until slightly thickened, then cool and store in the fridge.
  2. Blend the Ingredients: In a blender, combine watermelon, mint leaves, and lime juice. Strain the mixture through a sieve.
  3. Combine Ingredients: Mix the honey simple syrup with the watermelon mixture.
  4. Serve: Pour the mixture over ice in glasses. Top with lime sparkling water, mint leaves, and watermelon cubes.

Notes

  • You can adjust the sweetness by adding more or less honey syrup.
