Instructions
- Cook the Rice: Bring 2.5 cups of vegetable stock to a boil in a saucepan. Add salt and ground black pepper to taste. Stir in the raw basmati rice, cover, and cook for 8 minutes until the rice is tender and the liquid is absorbed.
- Sauté Vegetables: While the rice cooks, heat the extra virgin olive oil in a large pot over medium heat. Add finely diced onions, celery, green bell peppers, garlic, and chopped sage. Season with a dash of salt and ground black pepper. Sauté for about five minutes until the vegetables are soft but not browned.
