Description

This Vegan Banana Bread Mug Cake is a quick and easy single-serve treat that combines the comforting flavors of banana bread in a moist, fluffy cake made in the microwave or oven. Perfect for a fast, dairy-free, and egg-free dessert or snack, it requires minimal ingredients and less than five minutes from start to finish.

Ingredients

Scale

Main Ingredients

  • ⅓ cup mashed bananas
  • 1 tablespoon oil (15g)
  • 1 tablespoon almond milk or other vegan milk (15mL)
  • 1 tablespoon raw brown sugar or coconut sugar or other granulated sugar (12g)
  • 3 tablespoons all-purpose flour or gluten-free all-purpose flour mix (23g)
  • Pinch of sea salt (0.33g)
  • Pinch of ground cinnamon (0.12g)
  • ½ teaspoon baking powder (2.4g)

Optional Add-ins

  • 1 tablespoon chopped nuts and/or chocolate chips (14g)

Instructions

  1. Mix Wet Ingredients: In a microwave-safe mug, combine the mashed banana, oil, almond milk, and raw brown sugar. Whisk the mixture for about 30 seconds until fully combined and the banana is completely mashed.
  2. Add Dry Ingredients: Add the all-purpose flour, baking powder, sea salt, and ground cinnamon to the mug. Stir well for approximately 20 seconds to ensure the ingredients are fully incorporated and the batter reaches the bottom of the mug.
  3. Optional Add-ins: Fold in chopped nuts and/or chocolate chips if using. You can also sprinkle some on top for extra texture and flavor.
  4. Microwave Cooking: Microwave the mug cake for 80 to 120 seconds depending on your microwave’s wattage (1100W: 80 seconds; 900W: 100 seconds). It’s better if the cake is slightly undercooked as it will continue cooking while cooling.
  5. Cooling: Remove the mug from the microwave and let it cool for about 3 minutes to set properly before eating.
  6. Oven Alternative: If preferred, preheat the oven to 350°F (175°C). Transfer the batter to a 3.5-inch oven-safe ramekin and bake for 25 to 30 minutes. Remove and cool for 5 minutes before serving.
  7. Serve: Optionally sprinkle some coarse sea salt on top for enhanced flavor and enjoy your vegan banana bread mug cake!

Notes

  • This mug cake is a vegan recipe, made without eggs or dairy.
  • It can be ready in under 5 minutes using the microwave.
  • Using ripe bananas ensures the best flavor and natural sweetness.
  • You can substitute the all-purpose flour with a gluten-free flour blend to accommodate gluten sensitivities.
  • Microwave cooking times vary, so start with less time and add more if needed.
  • Adding nuts or chocolate chips is optional but adds great texture and flavor.
  • Letting the cake rest after cooking helps finish the baking process and improves texture.
