Main Ingredients:
- a drizzle of olive oil
- 2 pears
- 6 tablespoons vegan feta cheese
- 4 pinches freshly ground black pepper
- 2 tablespoons chopped raw walnuts
For the hot ‘honey’:
- 1/3 cup (80 mls) maple syrup
- 1 tablespoon red chili pepper flakes
- 1/4 teaspoon dried thyme
- 2 teaspoons apple cider vinegar
Instructions
- Preheat oven: Preheat oven to 375°F (190 °C).
- Prepare pears: Cut pears in half lengthways, scoop out the core. Place in a casserole, rub with olive oil, and sprinkle with black pepper.
- Stuff pears: Crumble feta into each pear half, add walnuts, and drizzle with olive oil.
- Bake: Bake uncovered for 40 minutes.
- Make hot ‘honey’: Simmer maple syrup, chili flakes, thyme, then stir in apple cider vinegar. Let cool before serving.
Notes
- One pear half is enough as an appetizer.
- Leftover hot ‘honey’ can be stored for months.
