Description

These Vegan Baked Pears are an elegant and flavorful dish, stuffed with vegan feta cheese, walnuts, and drizzled with a spicy-sweet ‘honey’ glaze. Perfect for a cozy dinner party or a special weeknight treat.


Ingredients

Main Ingredients:

  • a drizzle of olive oil
  • 2 pears
  • 6 tablespoons vegan feta cheese
  • 4 pinches freshly ground black pepper
  • 2 tablespoons chopped raw walnuts

For the hot ‘honey’:

  • 1/3 cup (80 mls) maple syrup
  • 1 tablespoon red chili pepper flakes
  • 1/4 teaspoon dried thyme
  • 2 teaspoons apple cider vinegar

Instructions

  1. Preheat oven: Preheat oven to 375°F (190 °C).
  2. Prepare pears: Cut pears in half lengthways, scoop out the core. Place in a casserole, rub with olive oil, and sprinkle with black pepper.
  3. Stuff pears: Crumble feta into each pear half, add walnuts, and drizzle with olive oil.
  4. Bake: Bake uncovered for 40 minutes.
  5. Make hot ‘honey’: Simmer maple syrup, chili flakes, thyme, then stir in apple cider vinegar. Let cool before serving.

Notes

  • One pear half is enough as an appetizer.
  • Leftover hot ‘honey’ can be stored for months.
