Description

Unicorn Bars are a vibrant, fun, and colorful dessert that’s as delightful to eat as it is to look at. Featuring a chewy brownie layer infused with white chocolate and sprinkles, perfectly topped with a creamy, pastel buttercream frosting, these bars are absolutely magical! Brownie Layer

  • 1 cup butter, softened at room temperature
  • 10 ounces white chocolate, chopped
  • 1 and 1/4 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 Tablespoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles

Buttercream Frosting

  • 1 cup butter, softened at room temperature
  • 4 cups powdered sugar
  • 3 Tablespoons heavy cream
  • 3 drops food coloring (red & blue)
  • 1/2 cup assorted rainbow sprinkles for decorating

Instructions

  1. Prepare Baking Dish and Oven
    Grease a 13 x 9-inch baking dish or line it with parchment paper. Preheat the oven to 325°F.
  2. Melt Butter and Chocolate
    Place butter and chopped white chocolate in a saucepan. Melt over low heat, stirring occasionally. Let the mixture cool for about 10 minutes. It’s normal for the butter and chocolate to separate; they will combine again when sugar is added.
  3. Combine Sugar and Eggs
    Add granulated sugar to the cooled butter and chocolate mixture, stirring until well-combined. Incorporate eggs one at a time, stirring well after each addition.
  4. Mix in Dry Ingredients and Sprinkles
    Stir in all-purpose flour, salt, and vanilla until well-combined. Fold in the rainbow sprinkles for a touch of color and fun.
  5. Bake the Brownie Layer
    Pour the batter into the prepared baking dish and bake in the preheated oven for 30 to 35 minutes, or until a cake tester comes out clean. Allow the brownie layer to cool completely on a wire rack before frosting.
  6. Prepare the Frosting
    In a mixing bowl, beat the softened butter for 2 minutes. Gradually add powdered sugar, alternating with cream, until a spreadable consistency is achieved. Add vanilla and beat for another 2 minutes for smooth frosting.
  7. Color the Frosting
    Set aside 1/2 cup of the frosting and tint it blue with a few drops of food coloring. Divide the blue frosting into two portions and tint one part purple using a drop of red food coloring. Adjust the coloring as needed to achieve the desired shades.
  8. Frost and Decorate
    Spread the remaining white frosting evenly over the cooled brownie layer. Place the blue and purple frostings into separate piping bags with a small snipped tip. Pipe diagonal blue lines across the bars, then pipe purple lines in the opposite direction to create a diamond pattern. Finish with a sprinkle of rainbow sprinkles on top.
