Description

This hearty Tuscan White Bean Soup combines savory Italian sausage, tender vegetables, and creamy broth to create a comforting and flavorful meal perfect for any occasion. Ready in under an hour, it’s a perfect option for a satisfying lunch or dinner.

Ingredients

Units Scale

Meat

  • 1 pound mild Italian sausage

Vegetables

  • 1 large yellow onion, diced (about 1 1/2 cups)
  • 3 ribs celery, diced
  • 2 large carrots, sliced into rounds
  • 2 teaspoons garlic, minced

Pantry Items

  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon ground black pepper

Liquids & Canned Goods

  • 4 cups (32 ounces) chicken broth
  • 2 cans (15.5 ounces each) Great Northern beans, drained and rinsed

Greens & Dairy

  • 2 cups (60 g) fresh baby spinach
  • 1/2 cup (119 g) heavy whipping cream

Garnish

  • Parsley, chopped for garnish

Instructions

  1. Cook the sausage: To a large Dutch oven over medium-high heat, add the sausage. Cook until browned and crumbly, about 10-15 minutes, using a wooden spoon to break up the meat.
  2. Prepare vegetables: Reduce the heat to medium. Add diced onion, celery, and sliced carrots. Cook until onions are translucent and softened, approximately 3-5 minutes. Stir in minced garlic and cook for another minute.
  3. Add seasonings: Stir in tomato paste, Italian seasoning, crushed red pepper, and ground black pepper until well combined.
  4. Add liquids and beans: Pour in chicken broth and add drained beans. Bring the mixture to a simmer, then reduce heat and continue simmering for 6-7 minutes, until vegetables are tender.
  5. Finish with cream and greens: Stir in heavy cream and fresh spinach. Cook until spinach wilts, about 5 minutes. Serve hot, garnished with chopped parsley.

Notes

  • Feel free to substitute turkey sausage for a leaner option.
  • For a creamier soup, increase the heavy cream to ¾ cup.
  • You can add other vegetables like zucchini or kale for variation.
  • Best served with crusty bread on the side.
