Instructions
- Cook the sausage: To a large Dutch oven over medium-high heat, add the sausage. Cook until browned and crumbly, about 10-15 minutes, using a wooden spoon to break up the meat.
- Prepare vegetables: Reduce the heat to medium. Add diced onion, celery, and sliced carrots. Cook until onions are translucent and softened, approximately 3-5 minutes. Stir in minced garlic and cook for another minute.
- Add seasonings: Stir in tomato paste, Italian seasoning, crushed red pepper, and ground black pepper until well combined.
- Add liquids and beans: Pour in chicken broth and add drained beans. Bring the mixture to a simmer, then reduce heat and continue simmering for 6-7 minutes, until vegetables are tender.
- Finish with cream and greens: Stir in heavy cream and fresh spinach. Cook until spinach wilts, about 5 minutes. Serve hot, garnished with chopped parsley.
