For the Chicken:
- 3 pounds boneless skinless chicken breasts
For the Sauce:
- 1 cup chopped onion
- 2 Tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups pineapple juice
- 1/2 cup brown sugar
- 3/4 cup ketchup
- 1 Tablespoon soy sauce
- 4 garlic cloves, minced
- 1 1/2 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground ginger
Instructions
- Prepare the Sauce: In a large glass measuring cup or mixing bowl, combine pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, and seasonings. Whisk until well mixed; set aside.
- Sauté Onions: Heat butter in a large skillet over medium-high heat. Sauté chopped onion until browned.
- Create the Sauce Base: Stir in flour, then add the pineapple juice mixture. Bring to a boil, stirring constantly for 10-15 minutes until the sauce thickens.
- Cook in Slow Cooker: Place chicken in the slow cooker and pour the sauce over it. Cook on low for 8 hours. Shred the chicken using two forks.
- Serve: Serve the Hawaiian chicken on sandwich rolls, over rice, or on salads. For thicker sauce, let some liquid evaporate before serving.
Notes
- Recipe updated on 8/11/17 to reduce brown sugar to 1/2 cup and increase sauce cooking time.
