Description

This Slow Cooker Hawaiian Chicken recipe is a delicious and easy dish that brings a taste of the tropics to your table. Tender chicken cooked in a sweet and tangy pineapple sauce, perfect for serving over rice or on sandwich rolls.

For the Chicken:

  • 3 pounds boneless skinless chicken breasts

For the Sauce:

  • 1 cup chopped onion
  • 2 Tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups pineapple juice
  • 1/2 cup brown sugar
  • 3/4 cup ketchup
  • 1 Tablespoon soy sauce
  • 4 garlic cloves, minced
  • 1 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger

Instructions

  1. Prepare the Sauce: In a large glass measuring cup or mixing bowl, combine pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, and seasonings. Whisk until well mixed; set aside.
  2. Sauté Onions: Heat butter in a large skillet over medium-high heat. Sauté chopped onion until browned.
  3. Create the Sauce Base: Stir in flour, then add the pineapple juice mixture. Bring to a boil, stirring constantly for 10-15 minutes until the sauce thickens.
  4. Cook in Slow Cooker: Place chicken in the slow cooker and pour the sauce over it. Cook on low for 8 hours. Shred the chicken using two forks.
  5. Serve: Serve the Hawaiian chicken on sandwich rolls, over rice, or on salads. For thicker sauce, let some liquid evaporate before serving.

Notes

  • Recipe updated on 8/11/17 to reduce brown sugar to 1/2 cup and increase sauce cooking time.
