This hearty and flavorful Breakfast Casserole is perfect for feeding a crowd. Frozen hash browns are layered with a cheesy egg mixture, ham, and a blend of cheddar and pepper jack cheeses. Prepare it ahead of time and bake it in the morning for an easy and delicious breakfast or brunch.

- 24 ounces frozen shredded hash brown potatoes

- 12 large eggs
- 2 cups half and half
- 1 teaspoon seasoned salt
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded pepper jack cheese
- 2 cups chopped ham, sausage, bacon, or preferred cooked meat
Instructions
- Prepare Baking Dish and Hash Browns: Preheat oven to 350°F (175°C). Spray a 13x9x2-inch baking dish with non-stick cooking spray. Spread the frozen hash browns evenly across the bottom of the dish. Season with salt and pepper.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, half and half, and seasoned salt. Stir in the cheddar cheese, pepper jack cheese, and chopped meat.
- Assemble Casserole: Pour the egg mixture evenly over the hash browns. Cover the dish tightly with aluminum foil.
- Chill (Optional but Recommended): Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the hash browns to thaw.
- Bake: Remove the foil and bake uncovered for 60-75 minutes, or until the eggs are set and the top is golden brown.
- Rest and Serve: Let the casserole rest for 10 minutes before slicing and serving. Garnish with green onions, if desired.

- You can use any combination of cheeses and meats you prefer.
- For a vegetarian version, omit the meat and add extra vegetables, such as bell peppers, onions, or mushrooms.
- If you don’t have half and half, you can use a combination of milk and heavy cream.
