- 3 diced avocados
- 1/4 cup diced red onion
- 1 diced Roma tomato
- 3 tablespoons chopped fresh cilantro leaves
- 1 teaspoon garlic powder
- Juice of 1 lime
- Salt and pepper to taste
- 8 egg roll wrappers
Instructions
- Heat Oil: In a large skillet, heat the vegetable oil to medium-high heat.
- Prepare Avocado Filling: In a medium bowl, add the diced avocados and mash to the desired consistency. Add the diced red onion, diced Roma tomato, chopped fresh cilantro leaves, garlic powder, lime juice, and salt and pepper to taste.
- Fill Wrappers: Lay one of the egg roll wrappers on a clean workspace with one corner facing you. Spoon some of the avocado mixture in the center of each wrapper.
- Seal Bottom: Using your finger, rub the edges of the wrapper with water. Bring the bottom edge of the wrapper up and roll it tightly over the filling.
- Fold and Seal Sides: Fold the sides in and continue to roll the wrapper up, pressing to seal. Repeat until all the wrappers have been used.
- Fry Egg Rolls: Add the egg rolls to the hot oil and fry until they are golden brown on all sides, for 2-3 minutes. Remove with metal tongs and place onto a paper towel-lined plate. Serve immediately with your favorite dipping sauce.

- You can use wonton wrappers for a smaller, bite-sized version.
