For the Sweet Potato Fries
- 4 sweet potatoes or yams
- 2 Tablespoons vegetable oil

For the Chipotle Lime Dip
- 1 1/4 cups mayonnaise
- 1/2 lime, juiced
- 1 teaspoon ground chipotle powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
Instructions
- Prepare the chipotle lime dip: In a small bowl, combine mayonnaise, lime juice, chipotle powder, chili powder, paprika, cumin, and garlic powder. Stir well until smooth. Cover and refrigerate for at least one hour to let the spices meld together.
- Preheat the oven: Set your oven to 400 degrees Fahrenheit (204 degrees Celsius) to prepare for baking the fries.
- Cut and coat the sweet potatoes: Slice the sweet potatoes into long sticks resembling fries. Place them into a large Ziploc bag, pour in just enough vegetable oil to lightly coat the potatoes. Seal the bag and toss to ensure even coating.
- Bake the sweet potato fries: Arrange the coated sweet potato sticks evenly on a cookie sheet to avoid overcrowding. Bake in the preheated oven for 35 to 45 minutes, turning the fries often to achieve even browning.
- Finish and season: Once the fries are lightly browned and crispy, remove them from the oven. Sprinkle kosher salt over them to taste while still hot.
- Serve: Serve the warm sweet potato fries alongside the chilled chipotle lime dipping sauce.
Notes
- Make Ahead – The dipping sauce can be prepared a day in advance and stored covered in the refrigerator to enhance flavor melding.
- Storage – Store any leftovers in the refrigerator for up to 5–7 days. Freezing is not recommended as the mayonnaise base may separate.
- Adjust the Spice – To reduce heat, lessen the chipotle and chili powder; for more spice, add cayenne pepper or sriracha.
