Description

A vibrant and refreshing fruit salad featuring a colorful mix of pineapple, strawberries, blueberries, grapes, blackberries, raspberries, and kiwi, all tossed in a bright honey lime dressing with optional apple cider vinegar and fresh mint. Perfect as a healthy side dish or a light dessert, this easy-to-make salad combines natural sweetness with tangy citrus for an irresistible treat.

Ingredients

Units Scale

Fruit

  • 27.5 oz pineapple (5 cups chopped)
  • 16 oz strawberries (about 3 cups)
  • 10 oz blueberries (2 cups)
  • 10 oz seedless grapes (red or green, 1.5 cups)
  • 8 oz blackberries (1.5 cups)
  • 5.4 oz raspberries (1 cup)
  • 8.4 oz kiwi (3 medium)

Dressing

  • 1/4 cup lime juice (from 2 limes)
  • 2 Tbsp honey (or maple syrup/agave)
  • 2 Tbsp apple cider vinegar (optional for extra tang)
  • 1-2 tsp lime zest (from 1 lime)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the fruits: Wash all the fruits thoroughly and dry them gently but completely to prevent the salad from spoiling too quickly. Be especially careful with the delicate berries to avoid squashing them.
  2. Cut and combine: Peel, core, and chop the pineapple; peel and chop the kiwi; de-stem and slice the strawberries. Place all these, along with the blueberries, grapes, blackberries, and raspberries, into a large mixing bowl.
  3. Make the dressing: Zest one lime and then juice two limes, combining the juice and zest in a small bowl or jar. Add honey and apple cider vinegar (if using) and whisk well until fully blended.
  4. Toss the salad: Pour the honey lime dressing over the mixed fruits. Gently toss everything together to coat the fruit evenly without bruising the berries.
  5. Serve and enjoy: Serve the fruit salad on its own or with optional toppings such as a dollop of vanilla yogurt, whipped cream or coconut cream, a scoop of ice cream, or a sprinkle of chopped nuts like walnuts, pistachios, almonds, or pecans for added texture and flavor.

Notes

  • This fruit salad is versatile and can be served as a refreshing side dish or a healthy dessert.
  • The honey lime dressing brightens the natural sweetness of the fruits, offering a tangy, vibrant flavor profile.
  • Drying the fruits thoroughly after washing helps extending freshness and prevents sogginess.
  • Optional apple cider vinegar adds a subtle tang, but can be omitted for a milder flavor.
  • Adding fresh mint leaves as garnish enhances the aroma and visual appeal.
  • Perfect for potlucks, BBQs, picnics, brunches, or family meals.
