- 1/4 teaspoon ground ginger (or 1/2 teaspoon fresh ginger paste)
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Combine Initial Ingredients: Combine the rice vinegar, water, granulated sugar, soy sauce, sambal oelek, minced garlic, and ground ginger in a medium saucepan over medium-high heat.
- Dissolve Sugar: Stir regularly until the sugar is completely dissolved.
- Thicken Sauce: Whisk together the cornstarch and the 2 tablespoons of water in a small bowl. Add the cornstarch mixture to the saucepan. Stir continually until the sauce thickens, about 1 minute.
- Cool and Store: Let the sauce cool completely, then pour it into an airtight jar and store in the refrigerator.
- Yield: Makes about 1 cup of sauce.

- For a smoother sauce, strain it through a fine-mesh sieve after cooking.
