Description

Ingredients

  • 1/2 cup unseasoned rice vinegar
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons sambal oelek (store-bought chili garlic paste)
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground ginger (or 1/2 teaspoon fresh ginger paste)
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Combine Initial Ingredients: Combine the rice vinegar, water, granulated sugar, soy sauce, sambal oelek, minced garlic, and ground ginger in a medium saucepan over medium-high heat.
  2. Dissolve Sugar: Stir regularly until the sugar is completely dissolved.
  3. Thicken Sauce: Whisk together the cornstarch and the 2 tablespoons of water in a small bowl. Add the cornstarch mixture to the saucepan. Stir continually until the sauce thickens, about 1 minute.
  4. Cool and Store: Let the sauce cool completely, then pour it into an airtight jar and store in the refrigerator.
  5. Yield: Makes about 1 cup of sauce.

Notes

  • Adjust the amount of sambal oelek to control the spiciness.
  • For a smoother sauce, strain it through a fine-mesh sieve after cooking.
  • This sauce pairs well with spring rolls, chicken wings, and stir-fries.
  • For a brighter red color you can add a drop of red food coloring.
