Description

A refreshing Summer Peach Watermelon Salad with a delightful combination of sweet and savory flavors. Juicy watermelon, ripe peaches, and fresh vegetables are topped with a zesty lemon balsamic dressing, pine nuts, and goji berries.


Ingredients

For the salad

  • Half a small watermelon
  • 1 cucumber
  • 3 tomatoes
  • 2 peaches
  • 2 tbsp zaatar
  • A handful of pine nuts
  • A handful of goji berries
  • 4 springs of fresh basil

For the dressing

  • Juice from one lemon
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Slice the watermelon: Cut into small triangles. Slice the cucumber, tomatoes, and peaches thinly.
  2. Arrange: Place the fruits and veggies on large plates.
  3. Prepare dressing: Whisk lemon juice, balsamic vinegar, olive oil, salt, and pepper in a bowl.
  4. Drizzle: Pour the dressing over the salad, sprinkle with zaatar, salt, and pepper.
  5. Garnish: Top with pine nuts, goji berries, and basil. Optionally, add more balsamic vinegar or pomegranate molasses.
