Marinara Sauce

  • 2 cups homemade marinara sauce (plus more for serving)

Lasagna Roll Ups

  • 9 uncooked lasagna noodles (wheat or gluten-free)
  • 10 oz package frozen chopped spinach (thawed and squeezed well)
  • 15 oz part skim ricotta cheese (such as Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • kosher salt (1/2 teaspoon for filling)
  • fresh black pepper (to taste)
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded


Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat the oven to 350°F. Ladle about 1 cup of marinara sauce on the bottom of a 9 x 12 inch baking dish to prevent sticking and add moisture during baking.
  2. Cook Lasagna Noodles: Cook the lasagna noodles according to the package directions until al dente. Once cooked, drain and lay them flat or on a sheet of wax paper to prevent sticking and to dry.
  3. Mix Filling: In a medium bowl, combine the thawed and well-drained chopped spinach, ricotta cheese, grated Parmesan cheese, one large egg, 1/2 teaspoon kosher salt, and fresh black pepper to taste. Mix thoroughly to create a creamy and well-seasoned filling.
  4. Assemble Roll Ups: Place a piece of wax paper on a clean surface and lay out the cooked, dry lasagna noodles. Spread approximately 1/3 cup of the ricotta-spinach mixture evenly over each noodle. Roll each noodle carefully and place seam side down in the prepared baking dish on top of the marinara sauce. Repeat this process for all 9 noodles.
  5. Top and Bake: Spoon the remaining marinara sauce evenly over the rolled noodles in the baking dish. Sprinkle 1 tablespoon of shredded mozzarella cheese on top of each roll. Cover the baking dish with foil and bake for 40 minutes, or until the cheese is melted and bubbly.
  6. Serve: To serve, ladle a little extra marinara sauce onto plates and place the lasagna rolls on top. Enjoy warm.
