Instructions

  1. Prepare the Marinade and Marinate Steak: In a small bowl, whisk together gochujang, green onions, soy sauce, rice vinegar, garlic, ginger, sesame oil, and sugar. Pour half of this mixture into a large ziplock bag. Add the flank steak, seal the bag, and refrigerate for at least 30 minutes or up to overnight to allow the flavors to penetrate the meat. Cover and refrigerate the remaining sauce.
  2. Cook the Steak: Heat oil in a large pan or skillet over medium-high heat. Use tongs to transfer the marinated steak from the bag to the pan, reserving the marinade in the bag. Cook the steak for 5-8 minutes per side, or until well-browned on the outside and cooked to your desired doneness. Remove steak and let it rest on a cutting board while you prepare the noodles.
  3. Cook Noodles and Vegetables: To the same pan, add the sliced onions, mushrooms, ramen noodles, ramen seasoning packets, and the reserved marinade from the bag. Pour 1 ½ cups of water over the ingredients and bring to a simmer over medium heat. Cook for 5-7 minutes, stirring occasionally, until the noodles are tender and cooked through.
  4. Combine Steak and Sauce: Thinly slice the rested flank steak across the grain into strips. Add the sliced steak and the remaining reserved sauce to the pan with the noodles and vegetables. Stir well to combine and cook for an additional few minutes until the steak is heated through.
  5. Serve: Garnish with additional green onions if desired. Serve immediately while hot for a delicious spicy Korean beef noodle meal.
