These Spicy Chipotle Honey Salmon Bowls are a delightful combination of flavors and textures. Tender, roasted salmon chunks are glazed with a spicy chipotle honey sauce, served over fluffy rice and topped with a refreshing avocado feta salad. Main Dish:

  • 4 (4-6 oz) salmon filets, cut into bite-size chunks
  • 6 tbsp extra virgin olive oil
  • 12 tbsp chopped chipotle in adobo
  • 2 tbsp honey
  • 1 tbsp tamari or soy sauce
  • kosher salt and black pepper
  • 1 tbsp apple cider vinegar
  • 1/2 cup fresh cilantro, chopped
  • 34 cups cooked rice

Avocado Feta Salad:

  • 2 avocados, diced
  • 2 small cucumbers, chopped
  • 1 serrano or jalapeño, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 tsp ground cumin
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp lime juice

Chipotle Mayo:

  • 1/2 cup mayo
  • 12 tbsp chopped chipotle in adobo
  • 2 tsp honey

Instructions

  1. Preheat the oven to 450°F: On a baking sheet, toss salmon with 3 tbsp olive oil, chipotle in adobo, honey, tamari, salt, and pepper. Roast for 10-15 minutes, then broil until charred.
  2. Prepare the cilantro lime sauce: Whisk together 3 tbsp olive oil, honey, and apple cider vinegar. Stir in cilantro, season with salt and pepper.
  3. Make the avocado feta salad: Combine avocado, cucumbers, serrano pepper, cilantro, cumin, and feta. Toss with olive oil, lemon juice, lime juice, and salt.
  4. Prepare chipotle mayo: Mix mayo, chipotle in adobo, and honey in a bowl.
  5. Assemble the bowls: Spoon salmon over rice, top with avocado salad, drizzle with cilantro lime sauce, and add a dollop of chipotle mayo. Enjoy!
