  • 7 oz rigatoni (or your choice of pasta)
  • 1 1/2 tbsp Cajun seasoning (divided)
  • 3 cloves garlic (minced)
  • 1/2 onion (sliced)
  • 1/2 red bell pepper (sliced)
  • 1/2 cup tomato sauce (or crushed tomatoes)
  • 1 cup heavy cream
  • 1/2 cup pasta water (reserved from cooked pasta)
  • 1 tbsp butter
  • 1/4 cup Parmesan cheese (grated)

Instructions

  1. Marinate the Chicken: In a medium bowl, combine sliced chicken breast with 1 tbsp olive oil and 1 tbsp Cajun seasoning. Massage the mixture to coat the chicken evenly, then set aside to allow the flavors to infuse while preparing other ingredients.
  2. Cook the Pasta: Bring a pot of salted water to a boil and cook the rigatoni until it is about 1 minute shy of al dente. Reserve approximately 1 cup of pasta water before draining the pasta. Set the pasta and water aside.
  3. Cook the Chicken: Heat a skillet over medium heat and drizzle in some olive oil. Add the marinated chicken slices and cook for 2-3 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and keep warm.
