Description

Delicious and spicy Buffalo cauliflower bites that are crispy on the outside and tender on the inside, coated in a flavorful buffalo sauce. These vegetarian bites make a perfect appetizer or game day snack served with ranch or blue cheese dressing and fresh celery and carrot sticks.

Ingredients

Scale

Cauliflower Bites

  • 1 large head cauliflower (cut into florets)
  • ½ cup all-purpose flour
  • ½ cup water
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray

Buffalo Sauce

  • ½ cup hot sauce
  • 2 tablespoons butter (melted)
  • ½ tablespoon lemon juice

For Serving

  • Ranch or blue cheese dressing
  • Carrots and celery sticks

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 450°F (230°C). Grease a baking sheet with cooking spray or line it with parchment paper to prevent sticking.
  2. Make the Batter: In a large bowl, whisk together the all-purpose flour, water, garlic powder, paprika, salt, and black pepper until you get a smooth batter with no lumps.
  3. Coat the Cauliflower: Add the cauliflower florets to the batter and toss them well to ensure each piece is evenly coated.
  4. Initial Baking: Spread the coated cauliflower florets on the prepared baking sheet in a single layer, making sure they have some space between them for even cooking. Bake in the preheated oven for 20 to 25 minutes or until they turn lightly browned, flipping them halfway through the baking time for even crispness.
  5. Prepare Buffalo Sauce: While the cauliflower is baking, mix the hot sauce, melted butter, and lemon juice in a small bowl until well combined.
  6. Apply Sauce and Bake Again: Remove the cauliflower from the oven and brush the buffalo sauce evenly onto each piece. Return the cauliflower bites to the oven and bake for another 15 minutes until they start to brown and become crispy.
  7. Serve: Serve the spicy buffalo cauliflower bites hot, accompanied by ranch or blue cheese dressing and fresh carrot and celery sticks for a classic tasty combo.

Notes

  • This recipe is a vegetarian and healthier alternative to traditional buffalo wings.
  • Be sure to space the cauliflower bites on the baking sheet to ensure they crisp up properly.
  • Adjust the spiciness by using more or less hot sauce depending on your preference.
  • Serve immediately for the best texture and flavor.
  • Perfect appetizer or snack for game day or casual gatherings.
