Description

This protein-packed Southwest Frittata is made with spicy turkey sausage, fresh vegetables, flavorful spices, and topped with cheddar cheese. It’s baked to perfection for a hearty, low-carb breakfast or brunch, and can be easily customized with your favorite toppings like salsa, hot sauce, cilantro, or Greek yogurt.

    • 1 lb. Jennie-O Turkey Sausage
    • 1 tsp. olive oil
    • 1 red bell pepper, diced
    • 1/4 small red onion, diced
    • 1 jalapeño, seeded and chopped
    • 1 tsp. chili powder
    • 1 tsp. cumin
    • Salt and pepper, to taste
    • 16 oz. liquid egg whites (or 10-12 large eggs, whites only)
    • 1/2 cup (56 g) shredded cheddar cheese

Instructions

  1. Preheat Oven & Prepare Skillet: Preheat your oven to 375°F (190°C). Heat a 10-inch oven-safe skillet or cast iron pan over medium heat and add olive oil.
  2. Cook Turkey Sausage: Add the turkey sausage to the preheated skillet. Break it up into small chunks and cook, stirring often, until fully cooked and no longer pink.
  3. Add Vegetables & Spices: Toss in the diced red bell pepper, red onion, and chopped jalapeño with the sausage. Stir occasionally, cooking until the vegetables are tender, about 5 minutes. Add chili powder, cumin, salt, and pepper; stir thoroughly to combine. Remove the skillet from heat.
  4. Add Egg Whites & Cheese: Pour the liquid egg whites evenly over the sausage and vegetable mixture in the skillet. Sprinkle the shredded cheddar cheese over the top.
  5. Bake: Transfer the skillet to the preheated oven and bake for 25 minutes or until the egg whites are fully set and the cheese is melted and bubbly.
  6. Cool & Serve: Carefully remove the frittata from the oven. Allow it to cool briefly, then cut into 8 equal slices. Serve hot, garnished with fresh cilantro, salsa, hot sauce, or a dollop of Greek yogurt as desired.
