Watermelon Juice:
- 3 cups cubed watermelon
Flavorings:
- 3/4 cup lime juice
- 1 tbsp honey
- 1/2 tsp vanilla extract
Thickening Agent:
- 1/4 cup gelatin

- Granulated sweetener
Instructions
- Prepare Watermelon Juice: Blend watermelon until liquid, strain, and collect 1 1/2 cups juice.
- Mix Ingredients: Combine watermelon juice, lime juice, honey, and vanilla in a pot.
- Add Gelatin: Sprinkle gelatin over the mixture and let sit for 2 minutes.
- Heat Mixture: Heat gently on the stove until fully liquid.
- Pour into Mold: Transfer mixture into molds or a container.
- Set: Chill in the fridge for 4-6 hours until firm.
- Serve: Remove from mold, coat with sweetener if desired, and serve chilled.
Notes
- The monk fruit sweetener resembles regular sugar but may melt in the fridge.
- To help sweetener stick, dry gummies on a rack for 90 minutes to 2 hours.
