For the Beef:
- 2 Tablespoons olive oil
- 2 1/2 to 3 pounds beef chuck roast
- Kosher salt
- Freshly ground pepper
- 2 (1-ounce) packages dry onion soup mix
- 2 cups water
- 2 (14.5-ounce) cans beef broth
For Serving:
- 6–8 slices Swiss or provolone cheese
- 6–8 crusty rolls (ciabatta works well)
Instructions
- Sear the Beef: Heat olive oil in a large skillet. Season chuck roast with salt and pepper. Sear on all sides until browned.
- Cook in Slow Cooker: Transfer roast to slow cooker. Sprinkle with onion soup mix. Add water and beef broth. Cook on high for 4-6 hours or low for 8-10 hours.
- Shred and Serve: When tender, shred the beef. Pile on rolls with cheese. Toast under broiler until cheese melts. Serve with au jus for dipping.

- Using a frozen roast: No need to thaw; adjust cooking time.
- Searing the meat: Optional for added flavor.
