Description

A comforting and creamy Slow Cooker Chicken Gnocchi Soup made with tender chicken breasts, hearty vegetables, pillowy gnocchi, fresh spinach, and Parmesan cheese simmered in a rich, flavorful broth. This easy-to-make soup is perfect for a cozy meal and pairs wonderfully with crusty bread.

Ingredients

Scale

Vegetables and Aromatics

  • 2 ribs celery, chopped
  • 1 large carrot, peeled and chopped
  • ½ medium onion, finely chopped
  • 1 teaspoon dried parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • ¾ teaspoon salt
  • ¼ teaspoon pepper

Proteins and Liquids

  • 2 boneless skinless chicken breasts (about 1 lb)
  • 4 cups low sodium chicken broth
  • ¾ cup heavy cream
  • 1 tablespoon corn starch

Other Ingredients

  • 3 cups small gnocchi (500g)
  • 1 ½ cups fresh spinach, roughly chopped
  • ¼ cup grated Parmesan cheese

Instructions

  1. Prepare Slow Cooker: Line a 4-6 quart slow cooker with a Reynolds Kitchens® Slow Cooker Liner for easy cleanup.
  2. Combine Ingredients: Add chopped celery, carrots, onion, dried parsley, garlic, thyme, salt, pepper, and chicken broth to the slow cooker. Stir to combine. Place the whole chicken breasts into the mixture, pressing them down into the liquid.
  3. Cook Soup Base: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the vegetables are tender and chicken is fully cooked.
  4. Shred Chicken: Carefully shred the chicken directly in the slow cooker using two forks, or remove the chicken to a cutting board to chop and then return it to the slow cooker.
  5. Thicken and Add Gnocchi: In a small bowl, whisk together the heavy cream and corn starch until smooth. Stir this mixture into the soup along with the gnocchi. Cover and cook on high for an additional 1 hour, allowing the gnocchi to become tender and the broth to thicken slightly.
  6. Finish Soup: Stir in the fresh chopped spinach and grated Parmesan cheese. Adjust seasoning with salt and pepper to taste. Serve hot and enjoy.
  7. Cleanup: Remove the slow cooker liner to see how quick and easy the cleanup is!

Notes

  • This soup is thick and creamy with tender chicken and flavorful broth.
  • Using a slow cooker liner makes cleanup hassle-free.
  • Serve with crusty bread for a complete comforting meal.
  • Small gnocchi works best for even cooking and texture.
  • Adjust seasoning at the end to your preference.
