Description

A hearty and comforting Slow Cooker Beef Stew with rich, flavorful gravy, tender beef cubes, and a mix of root vegetables simmered to perfection. Perfect for a family meal, this stew combines deep flavors from beer, tomato puree, and Worcestershire sauce for a satisfying dish that requires minimal hands-on time.

Ingredients

Scale

Beef and Coating

  • 1 kg Beef cubes
  • 3 tbsp Plain flour
    • Vegetables and Aromatics

      • 1 Onion
      • 3 Garlic cloves
      • 3 Carrots, peeled and chopped
      • 1/2 Swede (Rutabaga if in the USA), peeled and chopped

      Liquids and Seasonings

      • 2 tbsp Sunflower oil
      • 600 ml Beer
      • 2 Beef stock cubes (no need to dissolve)
      • 3 tbsp Tomato puree
      • 3 tbsp Worcestershire sauce
      • Salt and freshly ground black pepper, to taste

Instructions

  1. Coat the Beef: Thoroughly coat the beef cubes in plain flour, ensuring each piece is evenly covered. This step helps create a rich, thickened gravy as the stew cooks.
  2. Brown the Beef: Heat the sunflower oil in a pan or the slow cooker pan if it’s safe to use on the hob. Brown the beef cubes in batches without overcrowding the pan, cooking until they are golden and well-seared on all sides to deepen the flavor.
  3. Add Ingredients to Slow Cooker: Add the browned beef, chopped onions, garlic, carrots, swede, beer, beef stock cubes, tomato puree, Worcestershire sauce, salt, and pepper to the slow cooker pan or transfer everything into the slow cooker bowl if you used a separate pan for browning.
  4. Cook the Stew: Place the lid on and cook in the slow cooker. Set to HIGH for 5-6 hours or LOW for 8-9 hours. Cooking times may vary slightly depending on the size of the beef and vegetable pieces, but the stew is forgiving and hard to overcook.
  5. Serve: Once the beef is tender and the vegetables are cooked through, taste and adjust seasoning if necessary. Serve hot with your favorite sides.

Notes

  • Slow Cooker Beef Stew makes an excellent comfort food packed with rich flavors and tender meat.
  • Using beer adds depth to the gravy, but you can substitute with beef broth if preferred.
  • For thicker gravy, you can remove the lid in the last hour of cooking to allow some liquid to evaporate.
  • Feel free to add other root vegetables such as potatoes or parsnips for variety.
  • Brown the meat properly to develop the best flavor and color in the stew.
