  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tbsp tomato paste
  • 4 cloves garlic, minced
  • 1 1/2 cups medium or long grain rice
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 14 oz fire roasted tomatoes (1 can)
  • 2 cups low-sodium chicken broth
  • 1/4 cup green onion, sliced (for garnish)

Instructions

  1. Cook the Sausage: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Brown the sliced sausage for 2 minutes per side. Remove and set aside.
  2. Cook the Chicken: Add chicken, salt, and pepper to the skillet. Cook until browned, about 4-5 minutes. Remove from skillet.
  3. Sauté Vegetables: Add remaining olive oil, onion, and bell pepper to skillet. Sauté until onion is translucent.
  4. Add Aromatics and Rice: Stir in garlic and tomato paste. Add rice and toast for 1-2 minutes.
  5. Combine Ingredients: Return chicken and sausage to the skillet. Add paprika, garlic powder, onion powder, Italian seasoning, red pepper flakes, tomatoes, and broth. Stir to combine.
  6. Simmer: Bring to a boil, cover, reduce heat, and simmer for 20-25 minutes until rice is tender, stirring occasionally.
  7. Season and Serve: Adjust seasoning if needed. Garnish with green onion before serving.
