For the Cajun Chicken Sausage:
- 2 tbsp olive oil
- 10 oz smoked sausage, sliced into 1/2-inch pieces
- 1 lb skinless, boneless chicken breast, cubed
- 1/2 tsp salt
- 1/2 tsp pepper
For the Rice:
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 tbsp tomato paste
- 4 cloves garlic, minced
- 1 1/2 cups medium or long grain rice
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 14 oz fire roasted tomatoes (1 can)
- 2 cups low-sodium chicken broth
- 1/4 cup green onion, sliced (for garnish)
Instructions
- Cook the Sausage: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Brown the sliced sausage for 2 minutes per side. Remove and set aside.
- Cook the Chicken: Add chicken, salt, and pepper to the skillet. Cook until browned, about 4-5 minutes. Remove from skillet.
- Sauté Vegetables: Add remaining olive oil, onion, and bell pepper to skillet. Sauté until onion is translucent.
- Add Aromatics and Rice: Stir in garlic and tomato paste. Add rice and toast for 1-2 minutes.
- Combine Ingredients: Return chicken and sausage to the skillet. Add paprika, garlic powder, onion powder, Italian seasoning, red pepper flakes, tomatoes, and broth. Stir to combine.
- Simmer: Bring to a boil, cover, reduce heat, and simmer for 20-25 minutes until rice is tender, stirring occasionally.
- Season and Serve: Adjust seasoning if needed. Garnish with green onion before serving.
