- 1 cup cottage cheese
- 1 cup shredded sharp cheddar cheese
- 2 burrito size low carb tortillas
- 1 cup shredded cooked chicken
- 2 scallions, diced
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat your oven to 350℉ and line an 8-inch cake pan with parchment paper.
- Toast the tortillas: Place the tortillas in the oven while it preheats and toast them for 7 minutes, flipping halfway through. Once they start to slightly tan, remove and shred them into small squares with your hands.
- Prepare the egg mixture: In a medium bowl, lightly beat the eggs. Add the milk and cottage cheese, stirring to combine thoroughly.
- Combine all ingredients: Mix in the shredded cheddar cheese, cooked shredded chicken, diced scallions, and season with salt and pepper to your taste. Lastly, gently fold in the shredded tortilla pieces.
- Transfer and bake: Pour the mixture into the prepared cake pan and flatten it evenly. Bake for 30-40 minutes or until the top is golden brown.
