- Preheat and prepare pans: Preheat your oven to 425° F. Arrange 12-15 paper cupcake liners on a baking sheet to hold the fritters during baking.

- Assemble the fritters: Lay one sheet of thawed puff pastry flat on your counter. Brush the surface with 2 tablespoons of melted butter, followed by 1 tablespoon of apple butter. Sprinkle half of the cinnamon sugar mixture evenly over the pastry. Distribute half of the chopped honeycrisp apples on top. Place a second sheet of puff pastry directly over the apples, gently pressing down to seal the filling inside. Roll the layered dough into a log shape, similar to a cinnamon roll.
- Slice and shape: Cut the rolled dough into 6-8 rounds and place each round into the prepared paper cupcake liners on the baking sheet. Repeat the process with the remaining pastry sheets, apples, butters, and cinnamon sugar. Using the palm of your hand, gently press down each round to flatten it to about half its original size.
