Instructions

  1. Prepare Caramel: Place the 20 soft caramels and 2 tablespoons of heavy cream in a medium-sized microwave-safe bowl. Microwave on high for 1 minute, then stir. Continue microwaving in 20-second intervals, stirring well after each, until the caramel mixture is smooth. Let it cool for about 5 minutes.
  2. Assemble Crackers: Line a baking sheet with wax or parchment paper. Arrange half of the Ritz crackers (~30 crackers) on the sheet. Spoon about 1 to 2 teaspoons of the caramel mixture onto each cracker, spreading to cover but avoiding spillage over the edges. Top each with another Ritz cracker to form sandwiches.
  3. Chill Sandwiches: Place the assembled cracker sandwiches in the refrigerator and chill for at least 30 minutes to allow the caramel to set.
  4. Melt Chocolate Bark: Following package directions, melt the 24 ounces of chocolate almond bark until smooth.
  5. Coat Cookies: Dip each chilled cracker sandwich into the melted almond bark, shaking off excess chocolate. Place them back on the parchment-lined baking sheet immediately and sprinkle sea salt or sprinkles over the top while the chocolate is still wet.
