For the Blue Cheese & Walnut Mixture:

  • 3 oz. blue cheese, crumbled
  • 4 slices thick-cut bacon, cooked crispy and crumbled
  • 1/3 c. walnuts, finely chopped

For the Roasted Pears:

  • 3 large Bartlett pears
  • 3 T. honey, divided
  • 1 c. balsamic vinegar
  • 3 c. fresh arugula

Instructions

  1. Prepare Blue Cheese & Walnut Mixture: Combine blue cheese, crispy bacon, and chopped walnuts in a bowl. Set aside.
  2. Prepare Pears: Cut pears in half, scoop out seeds and flesh. Slice off a small section on the back. Place in a baking dish.
  3. Stuff Pears: Add chopped pear flesh to the blue cheese mixture. Fill pear halves with the mixture and drizzle with honey. Roast in the oven.
  4. Make Balsamic Glaze: Heat vinegar in a skillet until thickened.
  5. Assemble: Place arugula on plates, top with stuffed pear, drizzle with balsamic glaze, and serve.
