Pineapple Cowboy Candy:
- 1 Pineapple, cubed
- 3 Jalapeños, sliced
Pickling Water:
- 1.5 Inch Fresh ginger, finely chopped
- 2 cups Apple cider vinegar
- 2 cups Water
- 1 cup White granulated sugar
- 1 tablespoon Black mustard seeds
- 1 tablespoon Chili flakes
- 1/2 teaspoon Salt
Instructions
- Cut and Prepare: Cut the pineapple into bite-sized cubes. Slice the jalapeños and finely chop the ginger.
- Create Pickling Water: In a heavy-bottomed pan, combine all ingredients for the pickling water. Bring to a boil to dissolve the sugar.
- Add Ingredients: Add the jalapeños and pineapple to the pickling liquid. Bring to a boil, then simmer for 10 minutes.
- Adjust Sweetness: Taste and adjust sweetness by adding more sugar if desired. Once cooled, store in a clean, airtight bottle. Serve immediately or refrigerate.
