For The Piña Colada Smoothie
- 3 cups frozen pineapple chunks (about 1 pound/16 ounces)
- 1 cup coconut milk (light or full-fat canned coconut milk)*
- 1/2 cup pineapple juice or water
- 2–3 teaspoons honey, agave syrup, or pure maple syrup
- 1/8 teaspoon coconut extract
Optional Garnishes To Try:
- fresh pineapple wedge
- a maraschino cherry (or fresh cherries for paleo)
- fresh mint leaves
- whipped coconut cream (or whipped cream)
Instructions
- Make The Smoothie: Combine frozen pineapple, coconut milk, pineapple juice (or water), honey or agave, and coconut extract. (Add lime juice, if using.)
- Blend: Puree until the smoothie is completely smooth, pausing to scrape down the sides, as needed.
- Taste & Adjust: Taste the smoothie and add more coconut extract, sweetener, or lime juice, to taste.
- Garnish & Enjoy: Pour the smoothie into glasses and top with your favorite garnishes.
Notes
- Coconut Milk: Use coconut cream, full-fat coconut milk, or lite coconut milk based on your preference.
- Coconut Extract: Mimics the flavor of a classic piña colada; swap with rum extract or omit if desired.
