Cherry Tomatoes:
- 1 dry pint (about 2½ cups) cherry or grape tomatoes, halved
Peaches:
- 1–2 peaches, sliced into wedges
Burrata Cheese:
- 8 oz. burrata cheese, room temperature
Herbs and Seasonings:
- ¼ cup torn fresh basil
- 1 tablespoon fresh thyme
- Kosher salt and fresh ground pepper to taste
Dressing:
- 2–3 tablespoon olive oil plus more if needed
- 1 tablespoon balsamic vinegar or glaze plus more if needed
- honey or lemon for drizzling (optional)
Instructions
- Arrange Tomatoes: In a large bowl or serving platter, layer the sliced tomatoes, cherry tomatoes, and peach wedges.
- Add Burrata: Tear the burrata and distribute it over the tomatoes and peaches.
- Season and Garnish: Sprinkle basil and thyme over the salad. Season with salt and pepper.
- Drizzle Dressing: Drizzle olive oil and balsamic vinegar over the salad. Add more as needed but avoid oversaturating the salad.
- Serve: Serve immediately with optional honey and lemon wedges on the side.
