  • 3/4 lb chorizo sausage links, sliced into 1/2 inch pieces (about 4 links)

Instructions

  1. Prepare the base ingredients:
    Add the black beans, Rotel tomatoes, chicken broth, bell pepper, onion, rice, chili powder, cumin, salt, and ground black pepper to a wide, high-sided skillet or pot. Stir everything to combine thoroughly. Once combined, cover the pot.
  2. Start cooking:
    Place the pot over high heat and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and allow the mixture to cook for about 10 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  3. Add the chorizo:
    After 10 minutes, add the sliced chorizo to the pot. Stir gently to incorporate, and then cover the pot again. Continue simmering for another 10 minutes or until the rice is tender and most of the liquid is absorbed.
  4. Rest and serve:
    Remove the pot from the heat and uncover. Let the dish rest for 5 minutes to allow the flavors to meld further. Serve warm and enjoy!

Notes

  • For a vegetarian version, substitute the chorizo with plant-based sausage or additional beans.
  • For a milder flavor, use a can of plain diced tomatoes instead of Rotel.
