For the One Pot Sausage Pasta Skillet:
- 2 tablespoons butter
- 1 pound smoked sausage, cut into slices
- 1 cup diced onion
- 1/2 cup diced green pepper
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken stock
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (4 ounce) can green chilis
- 2 1/2 cups uncooked rotini pasta
- 1 cup heavy cream
- 2 cups shredded cheese (such as colby jack)
Instructions
- Heat a 12-inch skillet over medium-high heat. Add the butter, sausage, onion, and green pepper. Cook for 5-6 minutes.
- Add garlic and cook for about 30 seconds until fragrant.
- Stir in the chicken stock, diced tomatoes, green chilis, and pasta. Bring to a boil and cook uncovered for 15-18 minutes or until pasta is tender.
- Reduce heat and stir in the heavy cream and shredded cheese until melted.
- Garnish with fresh parsley if desired and serve!

- Any type of shortcut pasta can be used in this recipe.
- Feel free to use smoked sausage, kielbasa sausage, chicken, or hot sausages for variety.
