- 1 cup sun-dried tomatoes, drained and chopped
- 2 teaspoons minced garlic
- 2 tablespoons all-purpose flour

- 2 cups chicken broth
- 1 (18-ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 2 cups chopped fresh spinach
- 1/2 cup grated Parmesan cheese
- Red pepper flakes (optional, for garnish)
- Salt and pepper to taste (optional)
Instructions
- Sauté Aromatics: Heat the oil from the sun-dried tomatoes in a large skillet over medium-high heat. Add the chopped sun-dried tomatoes and minced garlic. Cook for 1-2 minutes until fragrant.
- Make the Roux: Add the flour, Italian seasoning, and paprika to the skillet. Stir to create a roux.
- Create the Sauce: Gradually whisk in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for 3-5 minutes, or until the sauce thickens.
- Cook Tortellini: Add the cheese tortellini to the skillet and stir to coat in the sauce. Simmer for 3-5 minutes, or until the tortellini are cooked through.
- Add Finishing Touches: Turn off the heat and stir in the heavy cream, spinach, and Parmesan cheese. Stir until the spinach wilts and the cheese is melted.

Notes
- This recipe is easily customizable. You can add cooked chicken, sausage, or shrimp for extra protein.
- If you don’t have sun-dried tomatoes packed in oil, you can use regular sun-dried tomatoes and add 2 tablespoons of olive oil.
- For a thicker sauce, simmer it for a longer time or add a slurry of 1 tablespoon of cornstarch mixed with 1 tablespoon of water.
