This One-Pan Marry Me Tortellini is a quick and delicious meal that’s perfect for a romantic dinner or a simple weeknight meal. This dish features cheese tortellini in a creamy sauce with sun-dried tomatoes, spinach, and Parmesan cheese, all cooked together in one pan for easy cleanup.

  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 teaspoons minced garlic
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • 1 (18-ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 2 cups chopped fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Red pepper flakes (optional, for garnish)
  • Salt and pepper to taste (optional)

Instructions

  1. Sauté Aromatics: Heat the oil from the sun-dried tomatoes in a large skillet over medium-high heat. Add the chopped sun-dried tomatoes and minced garlic. Cook for 1-2 minutes until fragrant.
  2. Make the Roux: Add the flour, Italian seasoning, and paprika to the skillet. Stir to create a roux.
  3. Create the Sauce: Gradually whisk in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for 3-5 minutes, or until the sauce thickens.
  4. Cook Tortellini: Add the cheese tortellini to the skillet and stir to coat in the sauce. Simmer for 3-5 minutes, or until the tortellini are cooked through.
  5. Add Finishing Touches: Turn off the heat and stir in the heavy cream, spinach, and Parmesan cheese. Stir until the spinach wilts and the cheese is melted.
  6. Serve: Season with salt and pepper, if needed. Garnish with red pepper flakes and serve immediately.

Notes

  • This recipe is easily customizable. You can add cooked chicken, sausage, or shrimp for extra protein.
  • If you don’t have sun-dried tomatoes packed in oil, you can use regular sun-dried tomatoes and add 2 tablespoons of olive oil.
  • For a thicker sauce, simmer it for a longer time or add a slurry of 1 tablespoon of cornstarch mixed with 1 tablespoon of water.
