Description

These No Bake Snickers Oat Cups combine layers of nutty oats, creamy date caramel, crunchy peanuts, and a rich chocolate topping for a delightful and easy treat. A perfect snack or dessert made with wholesome ingredients that’s freezer-friendly and optionally vegan.

Base Oat Layer:

    • 1 cup old fashioned oats
    • 1/4 cup almond flour
    • 1 cup natural peanut butter
    • 1/2 cup maple syrup (or honey)
    • 1 tsp vanilla extract
    • 1/2 tsp salt

Caramel Layer:

    • 1 cup medjool dates, packed + pitted
    • 4 tbs milk of choice
    • 1/3 cup roasted peanuts

Chocolate Topping:

  • 1/2 cup chocolate chips
  • 1 tbs peanut butter
  • flaky salt

Instructions

  1. Make the Base Oat Cups: In a medium bowl, mix together the oats, almond flour, peanut butter, maple syrup, vanilla, and salt until fully combined. Transfer the mixture evenly into 12 slots of a muffin tray lined with liners. Flatten the mixture as best as possible and freeze for at least 2 hours.
  2. Prepare the Date Caramel: In a mini food processor or blender, add in the pitted medjool dates and milk, then pulse until the mixture becomes smooth and well incorporated. Divide the caramel sauce evenly among the 12 oat cups.
  3. Add Peanuts: To each cup, place about 5 roasted peanuts on top of the caramel layer. Gently press them down so they stick to the layer. Return the cups to the freezer for another 1 hour.
  4. Make the Chocolate Topping: In a small pot over low heat, melt the chocolate chips and peanut butter together, stirring constantly until the mixture is smooth. Remove the muffin tray from the freezer, add about 1–2 tablespoons of the melted chocolate mixture on top of each cup, and spread it flat. Sprinkle some flaky salt on top.
  5. Final Freeze: Transfer the tray back to the freezer and let the cups freeze for another hour. Once set, the No Bake Snickers Oat Cups are ready to enjoy!

Notes

  • Make sure you use dairy-free milk and chocolate chips to keep this recipe vegan.
  • Almond butter or sunflower seed butter can be used as alternatives to peanut butter.
  • Store leftovers in an airtight container in your freezer. Remove and allow to thaw for about 5 minutes before serving.
