Ripe Tomatoes:
- 4 tomatoes (180g/6oz each)
Eschalots:
- 1 1/2 tsp finely minced
Garlic:
- 1/2 tsp finely minced
White Wine Vinegar:
- 1 tbsp
Extra Virgin Olive Oil:
- 3 tbsp
Cooking / Kosher Salt:
- 3/4 tsp
White Pepper:
- 2 pinches
Basil Leaves:
- 1 1/2 tbsp finely sliced, plus extra for garnish
Instructions
- Cut the Tomatoes: Cut tomatoes into wedges, removing the core. Place in a bowl.
- Season: Sprinkle eschalots, garlic, salt, and pepper over tomatoes. Drizzle with olive oil and vinegar.
- Toss: Gently mix to coat tomatoes. Add basil and mix again.
- Serve: Transfer to a serving bowl and garnish with additional basil. Serve immediately.
Notes
- Tomatoes – Ripe tomatoes are best, but even average tomatoes work well.
- Eschalots – Also known as shallots or French onions.
- Vinegar – White wine vinegar is recommended; other options include apple cider or sherry vinegar.
- Basil – Can be substituted with dried oregano if needed.
