Ingredients

Units Scale

Dry Ingredients:

  • 2 cups (250g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Wet Ingredients:

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1/3 cup (80g) plain yogurt or sour cream, at room temperature
  • 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
  • 1 teaspoon pure vanilla extract
  • optional: 3/4 cup (100g) chopped pecans or walnuts

Instructions

  1. Preparation: Adjust the oven rack to the lower third position and preheat to 350°F (177°C). Grease a 9×5-inch loaf pan with nonstick spray.
  2. Dry Ingredients: Whisk together flour, baking soda, salt, and cinnamon in a bowl.
  3. Wet Ingredients: Beat butter and brown sugar, add eggs, then mix in yogurt, bananas, and vanilla.
  4. Combining: Slowly add dry ingredients to wet, fold in nuts, and pour into pan.
  5. Baking: Bake for 60–65 minutes, covering with foil halfway through. Cool before slicing.

Notes

  • For best flavor, let the bread sit for a day before serving.
  • Consider adding cream cheese frosting or chocolate chips for variation.
  • Substitute sour cream or yogurt with mashed banana, applesauce, or pumpkin.
