- 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
- 1 teaspoon pure vanilla extract
- optional: 3/4 cup (100g) chopped pecans or walnuts
Instructions
- Preparation: Adjust the oven rack to the lower third position and preheat to 350°F (177°C). Grease a 9×5-inch loaf pan with nonstick spray.
- Dry Ingredients: Whisk together flour, baking soda, salt, and cinnamon in a bowl.
- Wet Ingredients: Beat butter and brown sugar, add eggs, then mix in yogurt, bananas, and vanilla.
- Combining: Slowly add dry ingredients to wet, fold in nuts, and pour into pan.
