Mushroom Topping

  • 1 1/2 cups sliced mixed mushrooms (such as baby bella aka cremini, button, shiitake, and oyster)
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon finely chopped fresh oregano
  • 1/4 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice

Additional Toppings

  • 1 to 2 ounces goat cheese, crumbled
  • 3/4 cup shredded mozzarella cheese
  • 1 to 2 tablespoons finely chopped chives
  • 1 pinch kosher salt
  • Olive oil for brushing and drizzling

  • Semolina flour or cornmeal, for dusting the pizza peel


Instructions

  1. Prepare the Dough: Follow the Best Pizza Dough recipe to make your dough. This process takes about 15 minutes for preparation and 45 minutes for the dough to rest and rise properly.
  2. Preheat the Oven and Pizza Stone: Place a pizza stone in the oven and preheat to 500°F. Alternatively, preheat your pizza oven if you’re using one for faster cooking times.
  3. Sauté the Mushrooms: Clean and slice the mixed mushrooms. Heat 1 tablespoon olive oil in a sauté pan or skillet over medium-high heat. Add the mushrooms, chopped thyme and oregano, and 1/4 teaspoon kosher salt. Cook for about 5 minutes, stirring occasionally until mushrooms are tender. Lower the heat to low, add the fresh lemon juice, stir, then remove from heat.
