For the Chicken:
-
- 1 tablespoon olive oil, extra virgin
- 1/2 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- Kosher salt, for seasoning
- Freshly ground black pepper, for seasoning
For the Dough:
-
- All-purpose flour, for rolling the dough
- 1 pound pizza dough, at room temperature
For the Toppings:
- 2 tablespoons barbecue sauce, plus more for drizzling
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded fontina cheese
- 1/4 small red onion, thinly sliced
- Ranch dressing, for drizzling
- Freshly chopped chives, for garnish
Instructions
- Preheat the oven: Adjust the rack to the upper-middle position and preheat the oven to 500 degrees Fahrenheit.
- Cook the chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken pieces and cook until golden and no longer pink in the center, around 6 minutes per side. Season generously with salt and pepper.
- Prepare the skillet: Meanwhile, brush an ovenproof skillet with olive oil to prevent sticking.
- Roll out the dough: On a floured surface, roll out the pizza dough until its circumference matches that of your skillet. Transfer the dough to the skillet carefully.
- Add the toppings: Spread barbecue sauce over the dough, leaving a 1/2-inch border for the crust. Top with shredded cheddar cheese, fontina cheese, cooked chicken, and thinly sliced red onion. Brush the crust edges with olive oil and sprinkle with a bit of salt.
- Bake the pizza: Place the skillet in the preheated oven and bake until the crust becomes crispy and the cheese is melted, approximately 23 to 25 minutes.
- Finish and serve: Drizzle the baked pizza with additional barbecue sauce and ranch dressing, then garnish with freshly chopped chives. Slice and enjoy!
Notes
- For added flavor, marinate the chicken beforehand in your favorite barbecue sauce.
- Feel free to customize toppings based on preference, such as adding bell peppers or mushrooms.
- If you don’t have fontina cheese, mozzarella can be used as a substitute.
- Ensure your skillet is oven-safe to avoid any issues while baking.
