Marshmallow Base

Instructions

  1. Prepare gelatin: Sprinkle the gelatin over a small amount of cold water and let it bloom for about 5 minutes until it softens and absorbs the water.
  2. Make sugar syrup: In a saucepan, combine sugar, corn syrup, and a pinch of salt. Heat over medium heat, stirring until sugar dissolves, then bring to a boil and cook until syrup reaches soft-ball stage (about 240°F / 115°C).
  3. Combine gelatin and syrup: Remove the syrup from heat and carefully add the bloomed gelatin, stirring until fully dissolved.
  4. Whip the marshmallow mixture: Transfer the syrup mixture to a mixing bowl and add mint extract. Beat with an electric mixer on high speed until the mixture is fluffy, thick, and has cooled slightly (about 10 minutes).
  5. Set marshmallows: Dust a pan with powdered sugar. Pour the marshmallow mixture into the pan, smoothing the surface. Let it set at room temperature until firm, approximately 20-30 minutes.
  6. Cut and shape: Once set, dust the top with powdered sugar. Cut the marshmallow slab into snowman shapes or circles using cookie cutters for snowman form.
  7. Melt candy melts and chocolate: Melt the orange candy melts and chopped dark chocolate separately in microwave-safe bowls in short bursts, stirring frequently until smooth.
  8. Decorate marshmallows: Use the melted orange candy melts to create snowman faces or carrot noses by piping or dipping. Use melted dark chocolate to add eyes, buttons, and mouths with a toothpick or piping bag.
  9. Let decorations set: Allow the decorated marshmallows to cool and the chocolate to harden before serving or storing.
