Popcorn Mixture
- 6 cups popcorn, popped
- 12 chocolate-mint sandwich cookies, broken into pieces
Chocolate Mint Drizzle
- 10 ounces white chocolate chips
- 1 tablespoon coconut oil or Crisco
- Few drops mint extract
- Green food color, a few drops
- Colored candy sprinkles, for decoration
Instructions
- Prepare baking sheets: Lay a sheet of parchment paper on two baking pans and set them aside to prepare for the popcorn mixture.
- Mix popcorn and cookies: Place the popped popcorn in a large bowl and allow it to cool completely. Once cool, add the broken chocolate-mint cookie pieces. Toss gently to combine and spread the mixture evenly in one layer across the prepared baking sheets. Remove any unpopped kernels to avoid any biting hazards.
- Melt white chocolate: In a microwave-safe bowl, combine the white chocolate chips with the coconut oil or Crisco. Heat in 15-second increments, stirring after each interval until the mixture is completely melted and smooth.
- Flavor and color the chocolate: Add a few drops of green food coloring and mint extract to the melted white chocolate. Stir well to evenly distribute the color and flavor.
- Drizzle chocolate over popcorn: Quickly drizzle the flavored white chocolate over the popcorn and cookie mixture on the baking sheets. Immediately sprinkle colored candy sprinkles over the top to decorate while the chocolate is still wet.
- Harden the chocolate: Place the baking sheets in the freezer for 5 to 10 minutes to allow the chocolate to harden completely.
- Serve: Once hardened, remove from freezer and break the treat into pieces. Serve immediately or store in an airtight container for later enjoyment.
