Description

  • 1 1/2 lb white fish fillet such as cod or halibut (1 to 1 1/2 in thickness)
  • Kosher salt and ground black pepper
  • Extra virgin olive oil
  • 1 lemon
  • 8 ounces cherry tomatoes halved
  • 3 ounces pitted olives halved (a combination of kalamata olives and green olives)
  • 1 shallot minced
  • 4 to 5 garlic cloves minced
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons dried oregano

Instructions

  1. Heat the oven: Preheat the oven to 400°F.
  2. Season the fish: Pat the fish dry, season with salt and pepper, and place in a baking dish.
  3. Prepare the topping: Combine tomatoes, olives, shallot, garlic, thyme, oregano, salt, pepper, and olive oil. Pour over the fish.
