  • 3/4 cup dry orzo pasta
  • 1 cup heavy cream
  • 3 cups baby spinach
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes, for garnish (optional)

Instructions

  1. Brown Sausage and Onions: In a large pot or Dutch oven, cook the ground sausage and diced onion over medium-high heat until the sausage is browned and the onions are softened. Add the minced garlic and cook for an additional minute until fragrant.
  2. Create a Base: Stir in the flour and tomato paste, cooking for a minute to toast the flour slightly.
  3. Add Broth and Orzo: Pour in the chicken broth, Italian seasoning, paprika, sun-dried tomatoes, and orzo pasta. Bring to a boil, then reduce heat and simmer for 10-13 minutes, or until the orzo is cooked through.
  4. Stir in Cream and Spinach: Add the heavy cream and baby spinach to the soup. Stir until the spinach wilts and the soup is heated through.
  5. Add Cheese and Season: Remove the soup from the heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with red pepper flakes, if desired. Serve with extra Parmesan cheese, if you like.

Notes

  • You can use any type of sausage you prefer, such as Italian sausage or chicken sausage.
