Instructions

  2. Sear the peppers, onions, and sausage: Heat a large skillet over medium-high heat. Add 1 teaspoon of olive oil and swirl to coat the pan. Add the chopped peppers, onions, and sausage slices. Cook for 10-15 minutes, stirring occasionally, until the vegetables are tender and both vegetables and sausage have nice seared spots for enhanced flavor.
  3. Cook the ravioli: While the pepper mixture cooks, bring a large pot of water to a boil. Add the frozen cheese ravioli and cook according to package instructions, about 5 minutes. Drain well.
  4. Prepare the tomatoes: While pasta and peppers cook, cut the grape or cherry tomatoes in half lengthwise to make about 1 1/2 to 2 cups.
