For the Marinade:

- 2 Tbsp chopped fresh parsley
- 1 1/2 tsp dried oregano
- 1 tsp kosher salt
- 1/4 - 1/2 tsp black pepper
- 1/2 cup olive oil
For the Chicken:
- 1 1/2 lbs boneless skinless chicken breasts, about 4 breasts, trimmed
- 2 lemons, one sliced, one cut into wedges (optional)
- Additional fresh parsley for garnish (optional)
Instructions
- Prepare chicken: Pound chicken breasts between wax paper to 1 inch thickness.
- Marinate the chicken: Combine lemon juice, vinegar, garlic, herbs, salt, pepper, and olive oil. Marinate chicken for 1-8 hours.
- Grill the chicken: Grill over medium-high heat for 5-6 minutes per side until cooked through.
