Lemon Brownies

  • 1 1/2 cups white sugar (300 grams)
  • 3 tbsp lemon zest
  • 3/4 cup unsalted butter (170 grams)
  • 1 cup chopped white chocolate (170 grams)
  • 3 large eggs, room temperature
  • 3 tbsp lemon juice
  • 2 1/4 cups all-purpose flour (287 grams)
  • 1/4 tsp salt

Lemon Glaze

  • 1 cup powdered sugar (125 grams)
  • 13 tbsp lemon juice
  • 1 tbsp lemon zest

Instructions

  1. Lemon Brownies – Pre-heat the oven to 350ºF. Grease and line an 8×8” square pan with parchment paper.
  2. Start by adding the sugar and lemon zest to a bowl. Rub the sugar and zest together to release the citrus oils. Melt the white chocolate and butter together, then combine with the lemon sugar. Add eggs, lemon juice, flour, and salt. Pour batter into pan and bake for about 35 minutes. Let cool.

  3. Lemon Glaze – Mix powdered sugar with lemon juice. Pour over brownies and let set before slicing.
  4. Storage – Store in an airtight container. Can be kept at room temperature overnight or refrigerated for longer storage.
