For the Korean Ground Turkey:
- 1 cup long grain white rice
- 1 lb lean ground turkey
- 1 Tbsp sesame oil
- 2 garlic cloves, minced
- 1 bunch green onions (separate half for garnish)
- 1 Tbsp fresh ginger, minced
- 3 stalks celery (about 1/2 cup chopped)
For the Sauce:
- 4 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 1/2 Tbsp honey
- 1 tsp chili garlic sauce
- 1/2 tsp red pepper flakes
For the Cucumber and Carrot Salad:
- 1 1/2 Tbsp white granulated sugar
- 1/4 tsp sea salt
- 1/4 cup rice vinegar
- 1 1/2 cup matchstick carrots
- 1 3/4 cup English cucumbers, thinly sliced
Instructions
- Cucumber and Carrot Salad: Mix sugar, salt, and rice vinegar in a bowl. Add carrots and cucumbers, toss well, and refrigerate.
- Prepare Rice: Cook long grain white rice according to package instructions.
- Korean Ground Turkey: Combine sauce ingredients. Brown ground turkey in sesame oil. Add garlic, ginger, celery, and sauce. Caramelize meat, add green onions, and cook briefly.
- Serve: Plate rice, top with Korean ground turkey, cucumber carrot salad, sesame seeds, and chili garlic sauce.
Notes
- Ground beef or ground chicken can be substituted.
- Any type of soy sauce or coconut aminos can be used.
- Sriracha is a suitable alternative to chili garlic sauce.
