Description

This hearty Kielbasa and Cabbage Soup combines smoky kielbasa sausage with tender Yukon Gold potatoes, sautéed cabbage, and carrots in a flavorful chicken broth. Enhanced with garlic, paprika, and dill, this comforting soup is perfect for family meals and offers a delicious balance of protein, vegetables, and spices.

Ingredients

Scale

Meat and Oil

  • 1 tsp Avocado Oil
  • 1 lb Kielbasa Sausage (sliced into rounds)
  • 1 Tbls Ghee (or butter)

Vegetables and Aromatics

  • 1 Yellow Onion (diced)
  • 4 cups Green Cabbage (sliced or shredded)
  • 3 cloves Garlic (minced)
  • 2-3 lbs Yukon Gold Potatoes (cubed)
  • 4 Carrots (peeled & sliced into rounds)

Seasonings and Broth

  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Dried Dill
  • 1/2 tsp Paprika
  • 5 cups Chicken Broth
  • Fresh Dill (optional topping)

Instructions

  1. Brown the Kielbasa: Heat the avocado oil in a dutch oven or large soup pot over medium heat. Add the sliced kielbasa and cook until evenly browned on both sides, about 5-7 minutes. Once browned, remove the kielbasa from the pan and discard any excess fat left behind.
  2. Sauté Vegetables: In the same pot, melt the ghee or butter over medium heat. Add the diced onion and sliced cabbage, sautéing for 4-5 minutes until they begin to soften and become fragrant.
  3. Add Remaining Vegetables and Seasonings: Stir in the minced garlic, cubed Yukon Gold potatoes, sliced carrots, salt, pepper, dried dill, and paprika. Continue to sauté everything together for another 2-3 minutes to combine the flavors.
  4. Combine Kielbasa and Broth: Return the browned kielbasa to the pot and pour in the chicken broth. Bring the mixture to a boil over medium-high heat.
  5. Simmer the Soup: Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork tender and all vegetables are cooked through.
  6. Serve: Ladle the soup into bowls and garnish with fresh or additional dried dill if desired. Enjoy warm for a comforting meal.

Notes

  • Smoky sausage, tender potatoes, and buttery cabbage create a flavorful, hearty soup perfect for family dinners.
  • This soup is easily adaptable by swapping out vegetables or adding extra herbs to taste.
  • Using ghee adds a rich, buttery flavor, but butter or oil alternatives work well too.
  • For a lighter version, use turkey kielbasa and reduce the amount of added fat.
  • Leftovers store well in the refrigerator for up to 3 days and flavors deepen overnight.
