Ideal for serving over meats, vegetables, and classic sides like mashed potatoes.
Ingredients
Scale
Stock Base
- 1 chicken stock cube / bouillon cube (or 2 tsp powder)
- 1 beef stock cube / bouillon cube (or 2 tsp powder)
- 2 1/4 cups (565 ml) boiling water
Roux
- 60g (4 tbsp) unsalted butter
- 4 tbsp plain (all-purpose) flour
- 1/2 tsp onion powder (can substitute with garlic powder or omit)
- 1/4 tsp finely ground black pepper
- Salt, to taste (optional)
Instructions
- Dissolve Stock Cubes: Crumble both the chicken and beef stock cubes into the boiling water and stir well until completely dissolved, creating the flavorful liquid base for the gravy.
- Melt Butter: Place the unsalted butter in a saucepan over medium heat and allow it to melt fully, preparing the base for the roux.
- Make Roux: Add the flour, onion powder, and black pepper to the melted butter. Stir continuously using a wooden spoon or whisk to combine the ingredients into a smooth paste, ensuring no lumps remain.
- Add Liquid Gradually: Slowly pour in half of the hot stock liquid while stirring vigorously to incorporate it into the roux. The mixture will thicken quickly.
- Incorporate Remaining Liquid: Add the rest of the stock liquid and continue stirring to combine everything into a smooth gravy.
- Thicken Gravy: Keep stirring the mixture for 1.5 to 2 minutes on medium heat until it thickens to the desired gravy consistency. Since the water is already hot, thickening happens quickly.
- Adjust Seasoning and Serve: Taste the gravy and add salt or more pepper if necessary. Serve warm over chops, steak, sausages, vegetables, roast chicken, pork, beef, or lamb for an elevated comfort meal.
Notes
- Using both chicken and beef stock cubes creates a deeper, richer flavor and better color compared to using only one type.
- Crumbling the stock cubes helps ensure they dissolve fully and evenly, which affects the gravy’s taste and appearance.
- If you want a gluten-free version, substitute the plain flour with a gluten-free flour blend or cornstarch.
- This recipe pairs beautifully with classic sides like mashed potatoes, especially KFC-style creamy mashed potato.
- Onion powder can be omitted or replaced with garlic powder if preferred.
- Adjust salt according to taste since stock cubes can be salty.
