Scale
- 2 lb Boneless skinless chicken breasts
- 2 tbsp Dried parsley
- 1 tbsp Dried dill
- 1 tbsp Dried chives
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Black pepper
- 16 oz Cream cheese (cut into pieces)
- 1 cup Cheddar cheese (shredded)
- 1/2 cup Bacon bits (cooked)
- 1/3 cup Green onions (chopped)
Instructions
- Arrange Chicken in Slow Cooker – Place the chicken breasts into the slow cooker in a single layer, ensuring they’re evenly distributed. This helps them cook uniformly and makes shredding easier later on.
- Season the Chicken – Sprinkle all the herbs and spices (dried parsley, dried dill, dried chives, garlic powder, onion powder, and black pepper) evenly over the chicken. Make sure to distribute the seasonings well to ensure every bite is flavorful.
- Add Cream Cheese – Arrange the pieces of cream cheese evenly over the seasoned chicken. Don’t worry about spreading it – the cream cheese will melt during cooking and blend with the other ingredients.
- Slow Cook – Cover and cook the chicken for 3-4 hours on high or 6-8 hours on low. The chicken is ready when it’s tender enough to easily shred with two forks. The internal temperature should reach at least 165°F.
- Shred and Mix – Using two forks, shred the chicken right in the slow cooker. Stir thoroughly to combine with the now-melted cream cheese, creating a creamy base for your dish.
- Add Remaining Ingredients – Stir in the shredded cheddar cheese, cooked bacon bits, and chopped green onions. Mix well until all ingredients are evenly distributed and the cheese is melted.
Notes
- For extra flavor, consider using rotisserie chicken seasoning instead of individual herbs.
- This dish pairs well with cauliflower rice or zucchini noodles to keep it keto-friendly.
- You can use pre-cooked bacon bits for convenience, or cook and crumble your own for a fresher taste.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- The dish freezes well for up to 3 months – perfect for meal prep.
- For a spicy version, add a dash of cayenne pepper or red pepper flakes.
